What actually happens when we cook milk? Mark points out that pasteurization is an “18th-century solution to an 18th-century problem” [07:22]. When you heat milk to high temperatures, you inactivate the bioactives, destroy the delicate fat cells, and kill the beneficial bacteria that produce lactase—the very enzyme needed to digest lactose.
This is why many people who suffer from “lactose intolerance” find they can enjoy this farm-fresh alternative without issue. In the community, this is often called “pasteurization intolerance”[09:46].
Raw Milk and the Gut-Skin Connection
As a skincare founder, Bethany was particularly interested in how raw dairy affects the skin.
